Herman’s Cooking Suggestions
Beef
Preheat oven to 450 degrees F. Allow meat to come to room temperature. Place meat on an open rack and place in oven for 5-7 minutes then turn to desired temperature as indicated below. Place ½ inch of water in bottom of pan to catch drippings. After following instructions below, remove meat from oven and allow to rest 5 minutes before carving.
Beef Filet
Reduce heat to 350 degrees F and bake for 35 to 40 minutes for medium doneness.
Prime Rib of Beef
Reduce heat to 325 degrees F and bake 2 to 2 ½ hours for a 2-rib roast, bake 2 ½ hours for a 3 rib roast, and bake 2 ½ hours for a 4 rib roast or longer. Maximum cooking time of 2 ½ - 2 ¾ hours.
Fresh Turkey
Preheat oven to 400 degrees F. After carefully washing turkey, place in large roasting pan and stuff and/or season to taste. Cover and place pan in oven. Bake for 5 minutes and then reduce heat to 325 degrees F and bake 10 to 12 minute per pound. Turkey is done when leg bone separates at the joint when turned. Remove from oven and allow to rest 5 minutes before carving. Check ½ hour before end of cooking time.
Pork
Preheat oven to 350 degrees F. Allow meat to come to room temperature. Place meat on an open rack and place in oven for 5-7 minutes then turn to desired temperature. After following instructions below, remove meat from oven and allow to rest 5 minutes before carving.
Pork Loin Roast
Bake 20 minutes per pound Crown Roast of Pork: Reduce heat to 325 degrees F and bake 20 minutes per pound. The average crown roast weighs 6-8 pounds. This makes a nice presentation stuffed. When serving, place in center of table with paper booties on each bone and carve between each bone as a serving.
Leg of Lamb
Preheat oven to 450 degrees F. Place lamb in casserole or roasting dish, and place in oven for 5 minutes. Reduce heat to 350 degrees F and bake for 1 ½ - 2 hours.
